Have you ever been stuck with what to have for lunch, especially on a budget? That’s what happened last week with myself and Binny, from Binny’s Kitchen, when we were both in need of some inspiration for our lunchboxes. A few twitter conversations and that’s when the idea for Ready Steady Lunch came about.
Here’s how it works; each week Binny and I swap something to inspire a lunch fit for the office. This week it was a list of ingredients and I got a full variety of ingredients including something that sits with my New Year’s Goal of trying new things – Feta Cheese. Yep, I’ve never tried it so here it is my recipe for an easy lunch. (And also I had loads left over so it will make at least two lunches for the week).
Chicken Mayo, Feta and Salad Wraps
Total time: 15 mins
3 mini chicken fillets
Baby plum tomatoes
1/2 red onion, diced
2 tbsp of mayonnaise
- Grill the chicken (I did it on our George Foreman, don’t know what I would do without it)
- Whilst that is cooking, dice the onion and place into a bowl with the mayonnaise. Next chop the cucumber, tomatoes and lettuce and leave to one side.
- Once the chicken is cooked, cut up and mix into the onion and mayo.
- Now assemble your wrap in which ever you wish. I personally like to start with the lettuce, then the chicken mayo mix, cucumber and tomatoes finishing with the feta crumbled on the top and roll into your wrap.
Tip: You can choose to season the mayo mix with some black pepper.
