Ready Steady Lunch: Part One

Have you ever been stuck with what to have for lunch, especially on a budget? That’s what happened last week with myself and Binny, from Binny’s Kitchen, when we were both in need of some inspiration for our lunchboxes. A few twitter conversations and that’s when the idea for Ready Steady Lunch came about.

Here’s how it works; each week Binny and I swap something to inspire a lunch fit for the office. This week it was a list of ingredients and I got a full variety of ingredients including something that sits with my New Year’s Goal of trying new things – Feta Cheese. Yep, I’ve never tried it so here it is my recipe for an easy lunch. (And also I had loads left over so it will make at least two lunches for the week).


Chicken Mayo, Feta and Salad Wraps
Total time: 15 mins

3 mini chicken fillets
Baby plum tomatoes
1/2 red onion, diced
2 tbsp of mayonnaise
Feta cheese

  1. Grill the chicken (I did it on our George Foreman, don’t know what I would do without it)
  2. Whilst that is cooking, dice the onion and place into a bowl with the mayonnaise. Next chop the cucumber, tomatoes and lettuce and leave to one side.
  3. Once the chicken is cooked, cut up and mix into the onion and mayo.
  4. Now assemble your wrap in which ever you wish. I personally like to start with the lettuce, then the chicken mayo mix, cucumber and tomatoes finishing with the feta crumbled on the top and roll into your wrap.

Tip: You can choose to season the mayo mix with some black pepper.
